Weeknight Enchiladas

Here's a super easy/quick recipe. Just thought I'd share!

1 lb ground beef
1 small onion, chopped
1 can tomato soup
1 can mild enchilada sauce
8 7-in flour tortillas
2 cups shredded cheddar, divided

Brown ground beef and onion. Drain. Add tomato soup and enchilada sauce. Spread about 1/4 cup of meat mixture on each tortilla. Sprinkle evenly with 1 cup shredded cheese. Roll up tortillas, and place seam side down, in a 9x13 pan. Pour remaining meat mixture over top. Cover with aluminum foil. Bake at 350 for 20 minutes. Remove aluminum foil, and sprinkle with remaining cup of cheese. Bake an additional 5 minutes.

-cough-cough-

Ick! I've got stinkin' bronchitis! It's been almost 2 weeks. That's why I haven't updated my blog. I know the world was anxiously waiting for my next entry!

My husband's birthday was last Monday! He also has a blog. www.unproductivitydefined.com. You should check it out. It's considerably nerdier than mine, but that's to be expected.

I'm Not Crazy

Well, at least not so crazy that they won't let me deal with sensitive data at work.

I have recently had to go through a psychological evaluation at work. They have to prove that I am capable of handling the type of information I handle. Yesterday I took a test that had about 560 true/false questions on it. Examples of some of the questions: "I would like to be a florist?" (true); "My soul has left my body before?" (false); "Sometimes I laugh at dirty jokes." (true); "I'm fascinated with fire" (true sort of, I marked false). That was a tough one. When I'm around fire, it fascinates me, but I don't go out of my way to be around fire, and I don't think about it when it's not around. There were several of the occupation type questions. In addition to florist, there was forest ranger (true), nurse (false), race car driver (false). There were also several questions about voices inside my head. I marked false on all those, but only because the voices told me to!

After the test, I had to go take an alcohol/drug test. Then today I met with a psychologist. That was interesting. It's the first time I've ever spoken with one. He asked interesting questions. I was constantly wondering what he was deciding about me. For the most part, I think I'm pretty boring. I'm happily married, financially secure, parents that love me, no history of alcohol or drug use, no eating disorders, and no history of mental illness.

I was granted permission to deal with the data that I deal with on a daily basis. Whew, that was a close one!

I Love Spring!


Today I decided to bring comfortable shoes, so that I could walk during lunch. It was fantastic. All the flowers are in bloom, and it's about 70 - 75 degrees outside, there's a nice breeze. I just really enjoyed it.

The reason I want to start walking is to try to get back into shape. I was doing the aerobics/kickboxing classes at lunch, but it's been a while since I've been to one. Those aren't the type of classes you can just decide to start back up, unless you want to pass out and/or vomit in front of the people you work with. I do not fit that category, so I'm trying to build back up.

Today was such a pleasant experience, I think I might just stick to walking for a while.

Back to "I Love Spring".....

Tonight my husband and I will go to Wal-Mart, because it's "grocery night". We usually drive through St. Elmo on the way from downtown to the Wal-Mart. There's a cemetery in St. Elmo where my mother used to always take me to look at the dogwoods/azaleas. I hope I can talk my husband into stopping by the cemetery so that I can see the flowers.

This is one of my favorite times of the year. I love the week or two where the dogwoods are starting to bloom, and the redbuds are still in bloom, and the azaleas are starting to bloom. Gorgeous! Don't forget to enjoy it while it lasts!

Supper Club

Tuesdays are one of my favorite nights. It's when we have "Supper Club". That means that my husband and I get together with two other couples and have dinner. We take turns going to each others' houses, then on the fourth week we go out to eat.

Tonight we're going out to eat. No one has decided for sure where, but I'm leaning toward Sugar Shack and Pizza. Today is the first day they're going to be open. It's a pizza place in Rock Spring, GA. It's about the 5th one that's been at this same location. Maybe this one will make it. I'm interested in seeing what makes it a Sugar Shack. On their sign they said they open at 6:00 a.m. I'm thinking this means doughnuts. mmmmm...doughnuts. It's so convenient, I really do hope they do well.

Mondays


I hate Mondays. Just wanted to get that out there. I hate it when the alarm goes off. I hate coming to work after the weekend. Today is especially bad. Gag!

Wildflowers

This is the peak time of year to see wildflowers! One of my hobbies is looking at, and taking pictures of, wildflowers.

Probably my favorite place to go is Shirley Miller Wildflower Walk. It's located at the end of Pocket Road, Chickamauga, GA 30707. I think of this as LaFayette more than Chickamauga, but whatever. My mother has been taking me here for years. In fact, we were going there before it was "Shirley Miller Wildflower Walk". We just called it The Pocket. Then we showed up one year, and there was a boardwalk there. That's fine. It's such a gorgeous place, I want as many people to be able to see it as possible, as long as they stay on the boardwalk. Believe me, there is a penalty for stepping off the boardwalk. I almost found this out the hard way a few years ago. It resulted in a $346 ticket for "soil compaction". Luckily, my mother was able to talk my way out of it.

If you've never been, you really need to find the time to go. Right now is the best time of year to go. If you can't make it this weekend, there'll still be some left next week. Once you leave the boardwalk, you're able to follow a trail out to a waterfall. It's absolutely gorgeous. Well worth the effort.

I've Got a Blog!

So, I decided to start a blog today. I'm very interested in what's going on with my friends, and I assume they're interested in what's going on with me. Since I apparently lack the inherent female trait of loving to talk on the phone for hours, this seems to be a good way to keep people up-to-date on what's going on in my life. My intent is to talk about things that interest me, interesting things I do, give out good recipes, and occasionally use it as a general forum for rants about things that irritate me.

Okay, I'm really just a megalomaniac with an egomaniacal need to vent my narcissistic tendencies. Admit it...everyone was thinking it, I just went ahead and said it out loud!
